Pretzels

These were the most amazing pretzels I have ever tasted and I am not a pretzel person. OK nothing beats a NYC pretzel but sometimes those can be scary. Who knows how long they have been on that cart. =)

1 package active dry yeast or (2 ¼ tsp instant yeast)

1/2 C. warm water

1 egg, separated

1/4 C. honey

1/4 C. butter unsalted, softened (4 Tbsp)

1 C. milk

1 t. salt

5 C. flour or (3 ¼ Cups wheat if grinding)

2 T. coarse salt

If using active yeast dissolve yeast in warm water in bowl. Mix yeast, egg yolk, honey, butter & milk. Add salt and enough flour to make stiff dough.
Knead on floured surface for 5 minutes. Place in greased bowl, turning to grease surface. Let rise for 1 hour or until doubled in bulk.
Roll out on floured surface. Cut into 1-inch-wide strips (He used a pizza cutter) . Fold strips in half. Roll into ropes. Shape into pretzels.
Place on baking sheet. Brush with a mixture of egg white and 1 tablespoon water. Sprinkle with coarse salt.
Bake at 425°F. for 15 to 20 minutes or until golden brown. Serve with mustard.
